Creamy, Cheesy Mushroom Chicken (20 min recipe)

Everyone needs a few recipes in their collection that are easy, delicious and most importantly won't take a lot of time to prepare. This creamy, cheesy chicken recipe with mushrooms is just that addition and is perfect on its own or on top of rice, couscous, pasta, cauli-rice or zucchini noodles. This recipe is a brilliant quick fix dinner for parents and young professionals alike and can easily be switched about to suit your preference in flavours or dietary needs. 

 

Ingredients (serves 2):
  • 2 chicken breasts cubed
  • 1 medium onion finely diced
  • 200g of sliced or quartered mushrooms
  • 1 tsp crushed garlic
  • 2 Tbsp of all-purpose flour (or coconut flour for a gluten conscious alternative)
  • 1 cup of low sodium chicken stock
  • ½ cup of cream
  • 1 cup of grated white cheddar cheese
  • 1 cup of crumbled feta cheese
  • 1 tsp dried oregano
  • ¼ cup of chopped fresh basil
  • 1 Tbsp of extra virgin olive oil
Method:
  1. Add the olive oil to a large pan over a medium to high heat and add the onions and cubed chicken. 
  2. Allow the chicken to brown on all sides and add the garlic and mushrooms. Cook until the mushrooms start to brown making sure to stir occasionally to avoid any burning.
  3. Add the flour or coconut flour and stir to ensure all the other ingredients are well coated then quickly pour in the chicken stock.
  4. Turn down the heat to a low-medium setting and stir until the flour and stock are well mixed then allow to simmer for a minute.
  5. Add the cream, herbs, and cheeses to the pan and allow to cook for another five minutes.
  6. Serve over a starch or starch substitute of your choice and enjoy.

The wonderful thing about this recipe is the element of simplicity. If you'd prefer a more vegetarian-friendly, substitute the chicken for lentils or chickpeas and use vegetable stock. Whatever you decide to serve this dish over, it's guaranteed to please everyone.
