Gluten-Free Savoury Muffins - Makes 12

Savoury snacks can be the bane of anyone suffering from gluten intolerances or simply trying to shed a little extra weight. The delicious selections of pies, pizzas, cheesy croissants and yummy sandwiches will have many of us giving into temptation now and suffering the consequences later. So why don't we have a delicious, keto friendly, banting inspired, gluten-free snack recipe to enjoy on hand? 
 
Well here is a recipe that is all that and a bag of chips. 30 minutes from start to finish, these muffins will give you the protein booster, on-the-go breakfast snack you need while being easy to make, filling, and cost-effective.
 
Ingredients: 
6 large eggs
1/3 cup of coconut flour
1/4 tsp salt
1/4 tsp baking powder
1/3 cup of melted butter
1/4 cup cold water
1 cup grated cheddar
1/2 cup crumbled feta
1/4 cup chopped chives
1 cup of diced ham
1/4 tsp ground black pepper
 
Method:
1. Preheat the oven to 200 degrees Celcius and thoroughly grease a muffin tin or line it with muffin cups.
2. In a mixing bowl, add the six eggs, salt, pepper, water, and melted butter and thoroughly mix until completely combined.
3. Gently sift the coconut flour and baking powder into the bowl and fold into the egg mixture using a wooden spoon.
4. Once completely mixed in, add the cheeses, chives and ham to the mixture and mix until dispersed evenly.
5. Spoon the mixture into the greased or lined muffin tray making sure each cup has the same amount of mixture.
6. Place in the oven and allow to bake for 12-15 minutes or until a knife test comes out clean.
7. Enjoy warm or refrigerate for a week and enjoy as an on-the-go breakfast.
 
Why use coconut flour? Coconut flour is high in protein and fibre while being naturally gluten-free. As it has an extremely high absorption rate, only a little flour is needed to create a fluffy, muffin-y texture making it a cost-effective alternative as well. Remember that coconut flour cannot be substituted at a 1:1 ratio to ordinary wheat flour, as this will result in a dry, gritty-textured muffin. Instead, for every cup of regular flour called in a recipe, replace with ⅓ of a cup of coconut flour.
 
Looking for a vegetarian option for your gluten-free muffin recipe? Simply replace the ham in your muffins with diced button mushrooms and an extra ½ tsp of salt. Delicious!
