Gourmet Sloppy-Joe Sandwich

Every now and then, there's nothing like chomping down on a big delicious sandwich to curb all your cravings at once! This sandwich is just that, satisfaction in every bite. Perfect for lunch or dinner, and anyone who loves good food with plenty of flavour, we know you'll be adding the ingredients for this sandwich to their weekly shopping list.
 
Ingredients:
  • 2 slices of ciabatta lightly toasted
  • A handful of baby spinach
  • 100g of lean mince
  • 1 tsp extra virgin olive oil
  • 1 Tbsp of tomato puree
  • ¼ tsp crushed garlic
  • ¼ cup finely chopped fresh basil
  • 1 large free range egg
  • ¼ cup of grated white cheddar cheese
  • ½ tsp paprika
  • Salt and pepper to taste.
     
Method:
  1. Over a low to medium heat, fry the mince and garlic in the olive oil until browned.
  2. Add the tomato puree, chopped fresh basil and salt and pepper to your preference,  allowing to cook until aromatic and any excess liquid has evaporated.
  3. Lightly butter one slice of ciabatta bread and carefully pile the baby spinach and grated cheese on top.
  4. When the mince is ready, scoop on top of the cheese and spinach. Quickly fry the egg to your preference and close the sandwich with the second slice of ciabatta.
  5. Serve with thickly cut chips and beverage of your choice.
     
Like with many of our recipes, the recipe itself is a guideline to a delicious meal but ingredients can be substituted to suit your personal taste or dietary needs. Rye bread works well with the flavours in this sandwich just as well as ciabatta. If you're looking for a gluten-free option, fry two large black mushrooms in place of the bread.
