Greek Style Squid and Couscous (serves 4)

When we think about good food, we often want something tasty, maybe a little exotic but definitely easy to make. Well, one of the easiest main meals to prepare that is tasty but also cheap is this Greek-style squid with couscous. This delicious and flavour packed meal has a variety of textures to delight and surprise you with every mouthful. So without any further adieux, here is the recipe for Greek-style squid and couscous.


 
Ingredients:
 
500g fresh squid heads (frozen is fine, just ensure to defrost them first)
2 cups of raw couscous
1 chicken flavoured stock cube
1 Tbsn Balsamic vinegar
2 Tbsn Extra virgin olive oil
1 can of chickpeas drained
A pinch of saffron 
2 Tbsn of boiling water
2 Tbsn basil pesto
A generous dash of paprika
1 red onion finely chopped
4 cups of baby spinach
½ cup roughly chopped tomato
Salt and pepper to taste


 
Method:
 
1. Place saffron and 2 Tbsn of hot water in a bowl and set to the side to allow the water to infuse with the saffron.
 
2. Cook couscous according to package instructions, mixing the chicken flavoured stock cube in with the water first, then set to the side.

3. In a large hot pan, add 1 Tbsn of extra virgin olive oil and swirl around the base of the pan. Rinse the squid heads thoroughly and add to the pan. Cook until tentacles curl, no longer than three minutes. Remove from pan and put to the side. 

4. Add the other Tbsn of extra virgin olive oil to the pan and add the onions, cook until soft. Add the balsamic vinegar, chickpeas and chopped tomatoes and cook at a medium temperature for about five minutes.

5. While the chickpeas and tomato cook in with the onion, mix the saffron infusion in with the now cooked couscous.

6. Add the paprika to the onion, chickpea, and tomato mixture and then add the baby spinach.

7. Cook until the spinach has wilted, then add the squid heads in for about one minute before removing the pan from the heat.

8. In a large bowl, gently mix the couscous, squid mixture, and basil pesto together immediately before serving. 

And that’s all there is to it. A simple dish with complicated flavours and textures to impress your loved ones and your guests: exotic, fun and full of healthy and nutritious ingredients. Remember to take time to make your cooking your own, there’s no law against adding your own ingredients or taking some ingredients you don’t like away.
