Jesse’s Mac and Cheese with a twist

This recipe in particular definitely does not fall into the healthy food collection of recipes that we have presented to you, but it may be the most delicious. Mac and Cheese is an all-time favourite recipe for families and kids just love it, but Jesse’s Mac and Cheese is the classic dish with a delicious twist. Here is a recipe that everyone will enjoy as a perfect midweek dinner.

Ingredients:
3 Tbsp. butter
2 Tbsp. flour
1 ½ cups of water
3 cups of grated cheddar cheese
200g of bacon chopped
1 onion chopped
1 Tbsp. Olive oil
1 punnet of button mushrooms chopped
1 large leek peeled and chopped
2 cups of full cream milk
300g macaroni and water to boil
1 tsp. Finely chopped dill
1 tsp. Finely chopped parsley
1 tsp. Finely chopped thyme
Salt and pepper to taste

Method:
Preheat the oven to 200 degrees Celsius.
In a medium to large saucepan, melt the butter over a medium heat and add the flour.
Slowly stir in 1 cup of milk to create a rue and stir for two to three minutes or until the rue becomes thick.
Add the chopped herbs, 1 tsp salt, 1 tsp ground black pepper, 1 ½ cups of water, 2 cups of grated cheddar, and another cup of milk, turn down heat to a low simmer and allow to slowly cook, adding more water if the sauce becomes too thick.
In a large saucepan, bring water to boil and add the macaroni noodles.
In a large pan, heat the olive oil and add the chopped onion and bacon and cook until the onion softens. Add in the chopped mushrooms and leek and cook for about five minutes.
Once the pasta is boiled, drain and add the bacon mix. Gently stir in the sauce and pour the combination into a large ovenproof dish.
Sprinkle the remaining cup of cheddar over the top and place in the oven for 20 minutes or until cheese has melted and begun to turn golden brown.
Serve and enjoy.

This easy to make meal is definitely a necessity in anyone's personal cookbook. Try adding different vegetables or meats such as chicken in place of bacon or baby spinach in place of leeks. There is no law against changing a recipe to suit your personal taste, so long as you have fun cooking and enjoy your meal, it’s all good.
