Traditional Indian Celebration Recipe: Sabudana Kheer

There is a wide variety of tantalizing sweet treats that are a part of traditional Indian cuisine but Sabudana Kheer is one of the favourite dishes for celebrations. This dish is usually served during festivals and celebrations where fasting takes place as it is highly nutritious. The delicate flavours of Sabudana Kheer are exceptional and give this dish it’s proud Indian heritage and it’s no wonder that is a family favourite.
Ingredients:
- 1 litre full cream milk
- ½ a cup of sago
- ¼ tsp saffron
- ½ tsp cardamom powder
- ¼ cup of sugar
- Dried rose petals, crushed cashew nuts, pistachio slivers for decoration
Method:
- Wash and soak the sago for between four and five hours.
- In a heavy bottom based saucepan, gently bring the milk to a boil. Once the milk starts to boil, add the fully soaked sago and saffron.
- Turn heat down to a gentle simmer and allow to cook until sago (between 40 to 60 minutes) is cooked through, making sure the milk doesn’t over boil and stirring occasionally.
- Add the sugar and cardamom to the sago and thoroughly mix through.
- Garnish with crushed cashew nuts, dried rose petals, and pistachio slivers and serve.
